With that little LGG in circulation aren't the items in the chao shop a little over priced?

It's the exact opposite. Chao items are special incentives for users to achieve, either through constant posting on the forum or through the market place. If you lower the price of items you in turn decrease the value.

They will be lowered, but no telling how much. Maybe not at all. But anyone who buys them now will get a special collector-esque quality that can't be received in the future. Ultimately, the prices are high to encourage people to sell valuable things in the Marketplace for LGG instead of USD/GG/etc. At the same time, it deflates the market and keeps value up by decreasing the amount in circulation.
But prices aren't set in stone. Anyone who pays more than others will be rewarded somehow.

That's why most are just 1k. The 2k+ are extremely rare items that should be kept rare. IIRC, only the two angelic items are that high.
Also, you replied before I finished my edit.

>few days
None of the items should be achieved after just a few days of posting. You'd have every item in like a week.
