Same concept as IRL middlemen if you've used them before. One of the parties give the goods they're trading to the middleman. Middleman gives the thing(s) to the other party after he/she verifies that the other party has given the goods to the main party/trade conductor.

I feel like giving an analogy to better explain it since my explanation is probably a bit faulty. But yeah, I think you get the gist of it.
