As much as I hate doing them myself, you should offer to do a Stage (where you work for free to show them you are competent/work habits). I know they are extremely popular/sometimes required to do in the culinary world; but in other fields of work I don't know how much of a difference they make, or if people accept them.
Currently doing one now where I go into this millionaire's club once or twice a week. Pretty much have that job in the bag, just waiting for their kitchen to be finished with it's renovations before I start my official training.

Just accept Paypal and Checks for payment. Make sure to keep track of how much you earn etc in case the IRS gets on your ass. They shouldn't bother you if you're making <5k/year.
Also, start off doing stuff for free to build up your portfolio and so you get some people who can vouch for your work quality. Then after you've got a good backing start charging. Digitalpoint, fiverr, etsy, deviant art, and forums are a really good place to start out.
