Legal age of consent in most states is 18, which means if you're under 18 and fuck, your parents can sue for rape even if it was consensual, completely disregarding any testimony you have.

18 gets into R movies, allows you to be drafted and lets you drive.
21 lets you drink, bar-tend, and be a legal adult in all instances that the 18 year old needs a legal adult and for all intent and purposes makes you a real legal adult since there are numerous ones where an 18 year old is not an adult.
Age of consent is so varied it doesn't really even come into this.
