Among a LOT of other things. Free apps, access to the iPod filesystem, apps that Apple won't let into the app store, and plenty of other things. I've had 2 different jailbroken iPods for about 2, and had no jailbreaking-related issues with them.

I'd say that the only downside is that Apple doesn't allow it, and it will void your warranty.
