OK, so you obviously heard there was a KH3 announced, did no research, and don't understand the time line of the games.
KH1 to KH2 there were some in between games that had no real bearing on the main story line between those two games. Some of the supplemental titles actually occurred before KH1. Recoded titles and such are just re-releases of the games and you don't really even have to consider them. The official time line is
Birth by Sleep
Kingdom Hearts
Chain of Memories
358/2 Days
Kingdom Hearts II
coded
Dream Drop Distance
Kingdom Hearts III
But like I said all you need to understand what's going on are the main numbered games.

If you played the games in that order, would it make the most sense, or is it better to play them in the order they were released?

In that order it makes the most sense. It's close to release order too. The jump from One to Two makes sense without any supplemental info. You'd never wonder if or think you missed anything. I expect it'll be the same with 3 and current released info point in that direction. The "In between" games are basically side stories. Chain Of Memories for instance explains what Riku and King Mickey do between One and Two, but they also tell you King Mickey and Riku ran around together fighting the darkness in Two. Really what they use the "in between" games for are to test new battle mechanics while weaving new stuff with old stuff, but only in a "let's smooth the wrinkles out" kind of way. You'd never miss them.
