I have had gigot d'agneau many times. All it really is is roasted leg of lamb. Nothing special. We rarely get foie gras here. The market for it is insane. 50$ for barely even 2 ounces! On the note of Mardi Gras, it's not a French holiday it's a Catholic holiday. The Spanish and Portuguese are pretty die hard about it. The Italians are in to o but not to the same extremes. If you want to be technical its actually Catholicism jacking a bunch of pagan celebrations and rolling them into one as an excuse to have fun before Lent when you don't get to eat meat and fast on Fridays.
