I'd assume it's still somewhere. xD Gaia keeps logs of everything.
I just doubt you'd be able to do anything with it.
Though...now I wonder...

Gaia does keep logs of items you sell back from your inventory, yep.
They pretty much keep logs of everything. :|
it's just a few bytes of data, other than the logs i highly doubt there is anything else left of it.
It just gets deleted.
Somewhere on the server, there is some data that looks similar to:
Item ID: 123456789101112
Item Name: Your Item Name
[all other item qualities]
When you sell it to the store, Gaia just deletes all traces of Item ID 123456789101112 and then adds gold to your account.
Items are just bytes of data like this post. Selling an item deletes it, much like if I deleted this post.
If it's like deleting a post where you can delete it, can they bring it back again?

If they keep records of it. You can't bring back a deleted post either, unless you keep it on the database. There is an option to "soft" delete posts, which similar to moving a deleted file on your computer to the Recycle Bin. Whereafter you can move it back if you want. Then there's an option to "physically" delete a post, which is similar to emptying the recycle bin -- it's not coming back.
Selling items to the store, I'm sure, physically deletes them. There would be no need for them to keep backups of items sold. That would be a waste of file space.

Well, I'm guessing it's like how you Shift-Delete an item on your computer and permanently delete a file. The server keeps a tiny record of the item's information and nothing more. Other than that, the item itself is deleted from your inventory and it's traces that it belonged solely to you are the only thing left.
That's just my thoughts. (Oh and if someone already said this, sorry, I kindda skimmed through the thread a bit fast. So again, sorry!)
